The family vineyard is around 72 hectares. It’s located on three towns: Bourg-Charents of Petite Champagne, Julienne and Saint Brice of Fine Bois. It’s 100% Ugni-blanc.
Process of the
development
The harvest
After taking the sunshine of Charente, which brings sugar-acidity balance, the grapes reach their maturities, and then it’s the time for harvesting. The harvest starts generally around the mid-September. Evolving with the times, the manual harvests have become mechanical and last about three weeks.
The distillation
The end of the harvests announces the start of distillation
Our distillery is one of the most important distillery in the region of Cognac. It consists of 15 alambic charentais. The distillation is called: “repasse” or double distillation.
The wines are heated and distilled for the first chauffe, it produces “brouillis”. Then this “brouillis” is distilled to become a pure and clean eau-de-vie. This is called the second chauffe or “la bonne chauffe”.The distiller master will make the cuts, that is to say, separate the liquid according to the alcoholic degree, this is the know-how of distiller master: the heads, the heart, the seconds and the tails. The distillation period is strictly regulated by the National Interprofessional Bureau of Cognac. It begins at the end of October and ends before the 31st March.

This signifies the youngest eau-de-vie in this blend has aged in the oak barrels for at least ten years.
MMillésime
Vintage is rare in Cognac but it’s not impossible. Its rarity comes from the fact that the BNIC has prohibited its marketing since 1962. Then its marketing was re-authorized. However, its monitoring remains highly regulated, the vintage barrels are sealed under the presence of a bailiff. The vintage is a blend of cognacs from the same year, the harvest and the distillation must be done during the same period. The vintage is unique.
